Chewy Chocolate Gingerbread Cookies

A request was made this week, but not by anyone in the office, by our daughter, Laura, for Chewy Chocolate Gingerbread Cookies. These have become a favourite in our house, especially at this time of year!

Banana Chip Cake

This week I had an excess of ripe bananas which usually end up in the freezer (excellent for baking).  I have made a Banana Chip Cake (the 'chips' being SKOR toffee bits).
