It is the last day in the Office before the Christmas holiday, it also happens to be Friday, this means baking Mince Pies and Sausage Rolls.

Chocolate Cake

A little late posting but "better late than never"!

The closer it gets to Christmas the faster the time passes.  It only seems like yesterday that it was Friday and here we are again, it is Friday.  Today was an encore presentation of the Chocolate Cake (with the addition of Chocolate Butter Cream) as I am still playing with both the timing and the oven temperature.

Banana Loaf

Last week I made a Glazed Lemon cake but it did not make it to the office (Nigel left it on the kitchen island!).

This week I had some bananas just right for baking, I decided on a Banana Loaf.

Banana Cake with Banana Icing

After the illnesses of last week things are now back to normal.

Staring at me from the fruit bowl were some ripe bananas and so I have made  Banana Cake with Banana Icing, with the addition of some semi-sweet chocolate.

Blueberry Buttermilk Pound Cake

This week I have made a Blueberry Buttermilk Pound Cake.  This recipe usually contains plain yogourt but, in view of the fact that I was completely out of this ingredient, I replaced it with buttermilk.

Puckery Lemon Squares

The weather is getting hotter but I still keep baking, even though the house does not have air conditioning and is 30 degrees.

That said, lemon is always popular, especially when it is hot.  Puckery Lemon Squares are, therefore, on today's menu,, although due to the extreme temperature they could be a little stickier than usual.

Lemon Curd Blueberry Loaf

The baking for today is a Lemon Curd Blueberry Loaf.

Jaffa Drizzle Loaf

Today's cake is a Jaffa Drizzle Loaf. The flavours are those of the Jaffa Cake biscuit.  For those who are unfamiliar with this biscuit I can best describe it as Lady Finger sponge base with and orange filling covered in chocolate (an excellent combination of flavours!).

Carrot Cake

This week I have made a Carrot Cake but, instead of a drizzle icing, I have made a Cream Cheese Frosting.

Looking back at the blog it would appear that this cake has not been made for the office since 2nd September 2011.

Apple Pie Muffins

Apple Pie Muffin Cake

This week I have made Apple Pie Muffin Cake, a twist on the Apple Pie Muffin. The recipe was doubled and baked in a 9" x 13" cake pan.

Puckery Lemon Squares and Coconut Carrot Cake

Last week I baked Puckery Lemon Bars/Squares but did not post as, due to Nigel being unwell, they did not make it to the office. They were enjoyed by the congregation at Church on Sunday.

This week, I thought that I would try again with the Puckery Lemon Bars/Squares (they are rather sticky) but have also baked Coconut Carrot Cake.

Blueberry Buttermilk Pound Cake

Due to unforeseen circumstances I was unable to post on 23rd Decemeber 2011. Mince Pies and Sausage Rolls were baked as has become the norm for the last Friday before Christmas.
