Mince Pies and Sausage Rolls

It is the last Friday before Christmas and also the last day in the office.  Traditionally at this time of year I make Sausage Rolls and Mince Pies and this year is no exception.

Gingerbread Blondies

This is the first entry in three weeks. Last week I made an Orange Drizzle Cake and the week before Canoli were provided by Alex.

This week I have made Gingerbread Blondies with a Cinnamon Icing, a recipe that I have not used before.

Applesauce Cake with Caramel icing

This week I have made an Applesauce Cake and topped it with a Caramel icing.  The walnuts have been replaced with, in this case, golden raisins.

The flavour of this cake could change slightly depending on the apples used.

Banana Cake with Banana Icing

This week, in the fruit bowl, were an excess of speckled fragrant bananas, the ones that generally end up being thrown in the freezer.  I decided that I would use them to make the Banana Cake with Banana Icing but add some toffee bits.

Apple Pie Cake

For the first Friday of November I decided to use apples in the baking.  I have, therefore, modified a recipe for Apple Pie Muffins and baked it as a cake.

Glazed Lemon Cake

During the month of October pumpkin is usually the main ingredient in the cakes but, this week there were lemons in the fruit bowl. I have made the favourite Glazed Lemon Cake.

Once again, this week, the main ingredient is pumpkin.  I have made Pumpkin Chocolate Chip Squares.

Pumpkin Carrot Cake

Jaffa (orange) Drizzle Loaf

This week I was looking at the fruit bowl for inspiration.  There were plenty of lemons, ripe bananas, a lime and some oranges.  Lemon is usually extremely popular and banana is used quite a lot, a change was needed.

Nigel suggested the Jaffa Drizzle Loaf.

Carrot Cake with Orange Cream Cheese Icing

This week, for your enjoyment (hopefully), I have made a Carrot Cake with a Cream Cheese Icing.

The cake is smaller this week due to the fact that there are not so many people in the office.  This meant that I could bake it in the smaller oven (this means not as much heat is being thrown into the house).

Banana Cake with Banana Icing

Nigel has been out of the office for most of the week but is back just in time for cake.

This week I had some bananas sitting in the fruit bowl just begging for some attention and no room for them in the freezer. Therefore, today's cake is banana with banana icing.

Apple Pie Muffin Cake

Last Friday there was no baking as Nigel was out of the officce.  Friday is here again and I have made an Apple Pie Muffin Cake for you to enjoy.  The topping on this cake does contain pecans.

Carrot Cake

Friday is here again.   For the baking this week I have made a carrot cake.  Instead of using all raisin I have used half raisins and half chocolate chips and chunks.  The icing is an orange cream cheese.

Banana Chocolate Chip Loaf

This week I had decided to make Lemon Curd and Blueberry Loaf.  I made the Lemon Curd yesterday morning and was then waiting for Nigel to pick up a punnet of blueberries on his way home.  Baking started late and then I was not happy with the cake. At around 9.00 p.m I decided to make a Banana Chocolate Chip Loaf.

Let the baking begin, find and defrost bananas, measure and mix ingredients and finally the baking went into the oven around 9.45 p.m., baked for about an hour and sat in the tin for 10 minutes before removing and cooling.  It was now 11.00 p.m.!

Coconut Macaroon Brownies

It's Nigel's birthday tomorrow so I asked what he would like me to bake. He loves coconut and he chose Coconut Macaroon Brownies.  As I only had unsweetened coconut the brownies have been dusted with icing sugar.

Double Chocolate Banana Loaf

This week I used the recipe for Banana Chocolate Chip Muffins and changed it a bit. I added some cocoa powder and sour cream.
