Sausage Rolls and Mince Pies

For many it is the last day at the office before the Christmas holidays.

Over the years it has become a tradition that I bake Mince Pies (using Nigel's homemade mincemeat) and Sausage Rolls for the last day, this year is no exception.  Quantities are limited to two dozen of each so you need to be speedy.

Chocolate Cake

It is the penultimate Friday before the Christmas holidays.

Yesterday I was wondering what to bake and thought about Chewy Chocolate Gingerbread cookies only to discover have quite enough molasses.  I then decided to make Chocolate cake and set about measuring and mixing the ingredients and found that I was short of cocoa, so this ingredient was replaced with chocolate.

Chewy Chocolate Gingerbread Cookies

Earlier this week I made Chewy Chocolate Gingerbread cookies for an event (the last Greenwood Storyfest of the season) and Nigel was a little disappointed that they were all leaving the house. Usually I make them to give Christmas gifts and have not made them for the office since December 20009.  As promised I have made them for today.

Banana Chocolate Chip (and Chunks) Cake

This week I decided to give pumpkin a break and at the suggestion of Nigel used bananas.  Banana chocolate chip muffins were suggested but, as they do not provide as many servings, I found a recipe for a Banana chip cake which was very similar, and topped it with some chocolate butter icing.

Pumpkin Carrot Cake

For the month of October I usually bake cakes and muffins containing pumpkin, this month is no exception.  The first cake of the month is a Pumpkin Carrot Cake.

I wrote this post yesterday but, at the time, had not decided on a topping and therefore saved it to 'drafts'.  The topping I decided on was a Cinnamon Cream Cheese Icing/Frosting.

Chocolate Cake

This week I decided, that since I had several occasions to bake for, that I would keep it fairly simple and use the same cake recipe twice.  To this end I have made a Chocolate Cake.  I shall also be making a Honeyed Apple Tart.

the texture of this cake seemed to be a little different, possibly due the fact that I used a hand mixer and usually I mix it by hand (manually)!

Banana Chocolate Chip (n' Chunks) Muffins

I am given to understand that there was a little bit of concern as to whether or not there would be baking today.  To make it a little easier (no worries about cake boxes) I have made Banana Chocolate Chip Muffins.

Sour Cream Bundt Cake

I thought that I should write this post before the power goes down for maintenance.

This week I was browsing recipes and decided on a Sour Cream Bundt Cake but with a few tweaks. So that it would be easier to portion (and possibly feed more people) I changed the pan in which the cake was baked.  I also swapped the pecans for chocolate chips.

Miniature Simnel Muffins

Due to illness there has been no baking to the past two weeks.

I know that it is Monday but as it was Nigel's birthday yesterday, as well as Easter Sunday, I thought that I would make some Simnel Muffins (as has become tradition for the Easter baking).  As these muffins are quite dense with dried fruit I have made them miniature.

Glazed Lemon Pound Cake

Looking at the fruit bowl yesterday (Thursday) it contained quite a few lemons.  I started looking at recipes and decided on a Glazed Lemon Pound Cake (slightly different from the usual recipe I use).

Due to the combination of lemons used, regular and Meyer (according to Wikipedia, a cross between a lemon and either a mandarin or an orange), the flavour may be a little different.

Ultimate Streusel Cake

This week I decided to try yet another new recipe Ultimate Streusel Cake.

As I have a large number of cookery books and recipes I decided that this year to try other recipes (not just the tried and tested recipes that are so popular).

The streusel, which is on bottom (top when baking) and inside does contain pecans, as well as cinnamon and cloves.
