Glazed Lemon Cake

Things are definitely back to normal.

Looking around this week the options were limited. I did have lemons and knowing that anything made using lemons is always well received decided on the Glazed Lemon Cake.

Miniature Simnel Muffins

Due to illness there has been no baking to the past two weeks.

I know that it is Monday but as it was Nigel's birthday yesterday, as well as Easter Sunday, I thought that I would make some Simnel Muffins (as has become tradition for the Easter baking).  As these muffins are quite dense with dried fruit I have made them miniature.

Puckery Lemon Squares

Although it may not feel like it, officially it is Spring.  With this in mind I have made Puckery Lemon Squares for today.  I have used Meyer lemons and so they may not be so "Puckery Lemon Squares".
