It is the last Friday before the Christmas holiday. It is traditional (and expected) that the baking be Sausage Rolls and Mince Pies. So as not to disappoint I spent a majority of yesterday in the kitchen making mini muffins for Laura's students and both flaky and shortcrust pastry (which needed to rest) before making Sausage Rolls and Mince Pies.

Orange (Jaffa) Drizzle Cake
Friday has rolled around again. For today I have made an Orange Drizzle Cake for your enjoyment, it is the second cake this week. Due to an excess of baking at the weekend Tuesday saw a Banana Cake with Banana Icing, another 9 x 13 cake. I did not want this cake to be wasted so sent it to the office with Nigel knowing that it was be consumed (It's a tough job but someone has to do it).

Pumpkin Carrot Cake
When deciding on a cake I usually look around the kitchen to see what I have. This week it was a toss up between bananas or pumpkin and carrot.

Glazed Lemon Cake
It has been two weeks since the last post. This is due to the fact that Nigel was out of the office for the first and I could take a break for the second. Having said that everything is back to normal. As has become custom, Witches Fingers are baked for the Halloween baking but as Nigel was not at work this did not happen.
October is the month that pumpkin features predominantly in the cakes. It is now November and I have made a perennial favourite, Glazed Lemon Cake.

Pumpkin Cake
Still baking with pumpkin as the main ingredient, this week I have made a Pumpkin Cake. This particular cake is usually baked in a bundt pan but for work usually works best in the 9" x 13" format.
Pecans have been used instead of walnuts in the streusel topping and chocolate chips replace the walnuts in the cake.

Pumpkin Carrot Cake with Cinnamon Butter Icing (Frosting)
It is mid-October and the main ingredient is still pumpkin.
This week I have made a Pumpkin Carrot Cake and topped it with a Cinnamon Butter Icing (Frosting). Chocolate chips have been used as a substitute for the pecans.

Pumpkin chocolate Chip (and Chunks) Cake
As mentioned last week, most of this month's baking will contain pumpkin. The recipes used are usually modified and baked in the 9 x 13 format as this tends to be the best format for the office.
This week a Pumpkin Muffin recipe has been used, replacing the raisins with Chocolate Chip and topped with a Cinnamon Cream Cheese icing (frosting).

Banana Cake with Banana Icing
I am making an extra entry this week due to the bonus cake today. I baked a Banana Cake with Banana Icing for Church on Sunday but ended up not going. I did not want the cake to be wasted so their loss is your gain.
Both Nigel and our daughter, Laura, ran the Rock 'n Roll 1/2 Marathon in Montreal at the weekend (as, I understand, did a few others from work) and was tracking their progress on the computer.

Made an early start on the baking this morning while it is only 26 C (the forecast is 30 C, 36 C with humidity).

This week I have made a Banana Cake with Banana Icing. This cake is moist. There always seems to be far too much icing and I end up refrigerating the left overs so, this time, I made 1/2 the quantity and that seems ample.

Apple Pie Cake
After several weeks of using the toaster oven for baking (not a problem for a small cake) the problem with the regular cooker was finally repaired on Monday and so I can now bake cakes of a suitable size for the office.
This week I had an excess of apples and at the suggestion of Nigel, settled upon an Apple Pie Cake. Using a different recipe than usual (the usual recipe is an adaptation of a muffin recipe)and dusting with icing sugar.

Carrot Cake and Chocolate Cake
This week, due to a delay with the repair of the electronics of the cooker, baking for a crowd is a little more of a challenge as oven capacity is reduced to the toaster oven. Not to worry, I am still baking.
As I am, indeed, using a smaller oven (which means smaller pans) I have made two cakes of different flavours, one is a carrot cake and the other is a chocolate cake.

Blueberry Yogurt (Buttermilk) Pound Cake
Both Nigel and our daughter were in Ottawa last weekend to run the Ottawa 1/2 Marathon, grocery shopping was, therefore, done on Monday evening. Fresh Blueberries were a good price this week and so I decided that the cake for this week would be Blueberry Yogurt Pound Cake.
When it came to baking yesterday I discovered that I was out of natural yogurt and had no orange juice. I replace the yogurt with buttermilk and the orange juice with juice from some mandarins which I had in the store cupboard. I also baked this cake in the 9" x 13" format for ease of cutting, rather than the bundt pan.

Bumbleberry Cake
Earlier in the week a small amount of Chocolate Cranberry Snack Cake and a larger quantity of Apple Muffin Cake was provided. Now it is time for the Friday baking.
For today I have made a Bumbleberry Cake (usually baked in a bundt pan). In order to make it easier for dividing and so that more people can be satisfied I usually adapt the recipes to fit a 9" x 13" pan.

Gingerbread
This is the first blog entry of 2015 and I would like to start by wishing everyone a Happy New Year and hope that you all enjoyed the break.
It is the first Friday after the Christmas holiday. The weather is definitely wintery (cold, although quite a bit warmer than yesterday, and snowy).
The cake that I decided to bake for today was gingerbread which I liberally dusted with icing sugar.
