After several weeks of using the toaster oven for baking (not a problem for a small cake) the problem with the regular cooker was finally repaired on Monday and so I can now bake cakes of a suitable size for the office.
This week I had an excess of apples and at the suggestion of Nigel, settled upon an Apple Pie Cake. Using a different recipe than usual (the usual recipe is an adaptation of a muffin recipe)and dusting with icing sugar.
This week, due to a delay with the repair of the electronics of the cooker, baking for a crowd is a little more of a challenge as oven capacity is reduced to the toaster oven. Not to worry, I am still baking.
As I am, indeed, using a smaller oven (which means smaller pans) I have made two cakes of different flavours, one is a carrot cake and the other is a chocolate cake.
After an absence of two weeks due to Nigel travelling and taking a few days vacation, things have returned to normal and I am back to the baking (not that it really stops!).
This week I have made the ever popular Glazed Lemon Cake.
