Maple-Glazed Doughnut (Bundt) Cake

This week I decided to try a new recipe.  Although this cake is meant to be baked in a bundt pan I have baked it in the usual 9" x 13" format.

The 9" x 13" format works best for the office.

Banana Cake with Banana Icing

Made an early start on the baking this morning while it is only 26 C (the forecast is 30 C, 36 C with humidity).

This week I have made a Banana Cake with banana icing.  I know that I made this two weeks ago but in this weather the bananas are ripening rapidly and I have run out of freezer space.

Banana Cake with Banana Icing

This week I have made a Banana Cake with Banana Icing.  This cake is moist.  There always seems to be far too much icing and I end up refrigerating the left overs so, this time, I made 1/2 the quantity and that seems ample.
