Sausage Rolls and Mince Pies

It is the last Friday before the start of the Christmas holiday.  This means that the baking turns to traditional Christmas fare.  It has become a tradition for me to make Sausage Rolls and Mince Pies (using homemade mincemeat) and so as not to disappoint, this year is no exception.

There are only two dozen of each so it is definitely first come first serve.

Gingerbread

'Tis the season of gingerbread, it started last week with a Chocolate Gingerbread, which Nigel informed me need more ginger.

This week I have kept it simple with an unadulterated gingerbread and just added a dusting of icing sugar.

Chocolate Gingerbread

Today is 1st December, which usually means gingerbread in some form or another.  This week is no exception.  The first cake for December is a Chocolate Gingerbread which I dusted with icing sugar.  This recipe was devoid of nutmeg so I added a little freshly grated.

Pumpkin Carrot Cake

This week there is more baking to be done.  I have made Pumpkin Carrot Cake with a Cream Cheese Frosting for the office.  Cranberry Orange Loaves will be made for the Church Bazaar and Chocolate Pumpkin Loaves with crystallised ginger for Sunday.

Not everyone likes pecans and maybe there are some with allergies so they were replaced with an equal quantity of chocolate (and a little extra).

Apple Pie Muffin Cake

For the cake this week I looked at several different recipes and took different elements from each.

I have made the Apple Pie Muffins but left off the topping, adjusted the recipe for a 9" x 13" pan, as usual, dusted with icing sugar and melted and drizzled (although it was more like dropped) toffee over the top.

Maple Glazed Doughnut Cake

After a one week absence (again), due to travel, baking is back.

This week I have made a Maple Glazed Doughnut Cake.  Looking back I last made this cake at the  beginning of March.  I have changed up the glaze a little by using some Maple Butter that I had.

Chocolate Pumpkin Swirl Loaf

Last week there was no cake baked by me due to travel.

Still in, for the purposes of baking, pumpkin month (where the main ingredient in the baking is pumpkin), I have made a Chocolate Pumpkin Swirl Loaf.  It has been a year since this was baked for the office.  As this recipe is in loaf form I have made two in order that there will hopefully be enough to go around.

This loaf contains fresh pumpkin, deseeded, baked and pureed by me, the usual spices, cinnamon, nutmeg, ground ginger, cloves and crystallized ginger.

Pumpkin Cake

Usually, I make this entry earlier in the day but today I have been doing other things and so am a little late.

It is now October and so time to bake with pumpkin.  This being said I have made a pumpkin cake, added chocolate and topped it with an orange (clementine) glaze.

Glazed Orange Cake

It is now officially autumn/fall.  The temperature is now more seasonal, at least temporarily, which makes it much more conducive to baking.  This week  I have changed up the Glazed Lemon Cake recipe and used clementines hence, Glazed Orange (Clementine) Cake.

Whilst trying to decide what to bake for this week I checked out the blog and realised that Glazed Lemon Cake had not made an appearance for almost two months.  Decision made.  Glazed Lemon it would be.

Blueberry Yogurt Pound Cake with Cream Cheese Icing (Frosting)

This week there were fresh blueberries waiting to be used hence, Blueberry Yogurt Pound Cake. There was also some cream cheese icing. So instead of dusting with icing sugar, I topped the cake with it.

French Fruit Braid

This week the suggestion was made that I bake something using apples.  However there were not enough apples to make an apple pie muffin cake (there were only two in the fruit bowl).  I set about looking at recipes and decide to make the French Fruit Braid which uses apples and raisins.  The recipe calls for 1 lb of apples and ½ lb of raisins, a little shy on the quantity of apples I augmented it with some homemade apple butter.

The icing (glaze) was made up with lemon juice instead of water.

I first made this recipe for the office back in 2009 and again in 2016.

Blueberry Yogurt Pound Cake

The months seem to be flying by, it is now the first week of August.  Despite the heat I had a busy day yesterday, baking three different flavours of cake, one for the office and the other two to be used as a sandwich cake.

For your enjoyment I have baked a Blueberry Yogurt Pound Cake, using lemon zest instead of orange (as lemons were the citrus available to me) and mandarin orange juice.

Blueberry Banana Cake with Cream Cheese Icing

Cake baking was planned for yesterday afternoon but had to wait until after 5 p.m.  As I was about to start, due to the thunderstorm, we lost power for several hours.

This week, I am trying out a recipe I have not baked before and using you as the guinea pigs (is it to stay in the rotation), Blueberry Banana Cake with Cream Cheese Icing.  Both the cake and the icing contain a small amount of rum which is spiced as that is what I had.

Blueberry Yogurt Pound Cake

Usually, other than the usual suspects, the ingredients I have available (fruit) determine what kind of cake I make.  This week it was blueberries so I have made a Blueberry Yogurt Pound Cake in the usual 9" x 13" format instead of a bundt.  I also added a little orange liqueur as I did not have enough orange juice.

Skor Brownies

This week I had some toffee bits and decided to go with the Skor Brownies. This meant that, for the usual format of 9" x 13", I had to double the recipe.  The toffee bits are used on the top of the brownies and I also added some butterscotch chips.

Chocolate Banana Cake with Chocolate Glaze

This week I made a Chocolate Banana Cake.  This recipe is meant to be baked in a loaf pan but works best as a sheet cake for the office.  Instead of scaling the recipe for a 9" x 13" pan (1 1/2 quantity) I doubled the recipe and baked it in two 7" x 11" pans.

Bumbleberry Cake and Giant Jaffa (Orange) Cake

Yesterday there was some bonus baking in the form of a Giant Jaffa Cake (with the orange jelly layer being homemade).  This was a joint birthday cake for the two birthdays recently celebrated. Quantities were definitely limited as it was only part of the original cake (next time I will down-size the recipe).

For today's cake I am hoping to coax some better weather with a fruity Bumbleberry Cake.  Usually made in the form of a bundt, this cake works best for the office as a 9 x 13.

I am trying out a different Banana Cake recipe, this one contains chocolate chips and is more like a pound cake.  This cake has been frosted with Orange Buttercream.

Jaffa (Orange) Drizzle Cake

Last weekend, while shopping, a box of  oranges was purchased as I needed the zest for a recipe.  Fresh, in my opinion always gives the best flavour and aroma.  Now I have plenty of oranges to use so decided to make the Jaffa (or in this case Naval) Orange Cake.

Simnel Muffins

Baking  is a day early this week due to the Easter holiday, tomorrow being Good Friday.  With that in mind it has become tradition that I bake Simnel Muffins.  These are limited in quantity it is advisable to arrive early as it is definitely 'first come, first served'.

Chocolate Cake

This week I thought that I would make a chocolate cake and set about deciding on a recipe.  The recipe I decided upon is a chocolate pound cake, so called because most of the ingredients weigh one pound, making the cake quite heavy.  I topped this cake with a cream cheese icing (frosting).

Jaffa (Orange) Drizzle Cake

This week the cake is a Jaffa Drizzle Cake. Jaffa is a variety of orange which is not available here so I use whatever I have.

This morning as Nigel was getting ready to leave we did the usual check list and as he was not taking lunch today it did not dawn on either of us that he did not pick up the cake box.  No worries, the cake will be there, if a little late, as arrangements have been made for the cake to be picked up.

Banana Cake with Banana Icing

Let me start by saying Happy New Year.

After a fortnight due to extended vacation I am back in the kitchen baking, not that I stop as Christmas is a very busy time for baking.

For the first cake of the year I have made the Banana Cake with Banana Icing as I had some really nice bananas in the fruit bowl just right for such a cake.
