Chocolate-Coconut Sheet Cake

This week I decided on a chocolate cake and Nigel asked for maybe chocolate with some coconut.

I set about looking at recipes and settled on Chocolate-Coconut Sheet Cake.  The cake itself does not contain any coconut but the topping is loaded with it.

Apple Cake with Streusel Topping

This week we had a large quantity of apples.  It was suggest by Nigel that I make an apple cake with a streusel topping.

Looking through recipes I have taken elements from more than one recipe and combined them.

Banana Cake with Banana Icing

The main ingredient this week in the baking is bananas.  This is due to an excess of ripe bananas and no room in the freezer.

I am starting the baking off this year with a Banana Cake with Banana Icing.
